Where it came from

Milan, Italy

early 1900s

Luigi Bezzera patented an early pressure-brewing machine in 1901. Desiderio Pavoni then helped turn it into the fast bar drink that became espresso.

Starting recipe

You'll need

Coffee in

Espresso out
36 g

    Dose

    Grind 18 g of coffee into a dry basket, distribute evenly and tamp level.

    Pull

    Extract about 36 g into the cup in 25 to 30 seconds.

  3. 03

    Taste

    Stir, taste, then adjust the grind before changing anything else.

At a café

Ask for a single or double. A double is the usual modern café starting point.
