Nguyen Van Giang is credited with creating egg coffee at Hanoi’s Sofitel Legend Metropole when fresh milk was scarce, whipping egg yolk and sugar instead.

Build
Whip egg yolk with condensed milk until pale and thick, then spoon it over strong hot coffee.
