Doppio simply means double. It grew out of Italian espresso-bar language, then became the default specialty-café serving as baskets and machines became larger.

Prepare
Use a double basket and dose 18 g of freshly ground coffee.

Aim for 36 g in the cup in 25 to 30 seconds.

Serve immediately in a warmed demitasse.
At a café
Ask for a doppio when you want espresso without milk but prefer a fuller serving.
